Ontario Apricot and Brie Stuffed French Baguette

A baguette is hollowed out and filled with Brie cheese, fresh sliced Ontario apricots and roasted garlic. The baguette is baked off and served sliced for a sweet and savory appetizer.

Ingredients

 

1 baguette
2 cloves roasted garlic
4 oz Brie cheese, sliced 125g
4 Ontario apricots, sliced
1/3 cup apricot jam 75 mL
1 green onion, sliced

Directions

1. Preheat oven to 350°F (175°C)
2. Using a long knife, cut baguette in half and hollow out each half leaving some bread along the edges. Set aside.
3. Use a knife to spread roasted garlic around the inside of each hollow baguette half. Stuff apricot jam, brie cheese, green onions and sliced apricots inside each of the baguette halves and wrap in foil.
4. Bake for 15 minutes or until cheese in melted and bread is toasted.
